Holiday Entertaining Presentation for Hampton Lake

Tis the season to entertain! Celebrations Catering practices the art of entertaining all year round, however yesterday our team was especially excited to share tips, recipes and special crafts at Hampton Lake.

Our featured drink was a Mulled Cider that is not only tasty but a fantastic way to infuse your home with the delicious seasonal scent! This simple recipe may be made directly on your stovetop or if space, but if space is an issue a crock pot is another great option.

Hot Mulled Cider
Ingredients:
(1) Gallon Apple Cider
(1) Orange dotted with whole Cloves
(4) Cinnamon Sticks
(1) TBSP ground Cinnamon
(1) TBSP ground Nutmeg
(1) Sliced Red Apple

Method of Preparation:
Combine all ingredients, bring to a boil, reduce to a simmer and serve.
Optional
To really spice up your cider we recommend adding (1) 1/2 shot of Spiced Rim or Bourbon to each 8 ounce cup of cider.

As any chocolate should be a necessary element for any party we shared a secret recipe of Chef Andrew’s – his home made truffles!

Chocolate Truffles
Ingredients:
2 ½ Pounds of Bitter Sweet Chocolate **Callebaut Chocolate is Recommended
1 ½ Sticks of Butter
2 Cups of Heavy Cream
4 Tbs. of Corn Syrup, Light
¼ Cup of Brandy

Method of Preparation:
-Chop chocolate into random pieces (size of pebbles) and place in microwavable bowl with butter on top. Cook in microwave until chocolate starts to melt. (Pulse 1 minute at a time.)
-In a saucepan, combine cream & corn syrup, cook over med/high heat until mixture comes to a simmer. Remove and pour over Chocolate/Butter mixture.
-Let mixture set (2) minutes. Stir until uniform, add brandy and combine.
-Pour into pan, place into refrigerator to harden. (4 hours to overnight)
-Remove from refrigerator and set on counter approximately 30 minutes. (Chocolate will be easier to scoop)
-With the desired size scoop, scoop truffles. **Tip: Having a bowl of hot water to refresh scoop is handy.
-Set truffles back in refrigerator to harden again. (Approximately one hour) Roll balls in palms of hand to make nice and round.
-Roll truffles in desired topping. (Sprinkles, toasted almonds, coconut, powdered sugar, etc…)
